Roasted Strawberries & BrieRecipe by: Andrea Kilian

Nothing screams summertime like strawberries! These roasted berries top an oven-baked brie that will will leave you drooling for days. For a truly decadent afternoon appetizer, pair with Decadence (Strawberry Chocolate) wine from Rush Creek Wines or other members of the Ontario South Coast Wineries & Growers Association. The tart strawberry and dark chocolate notes of the wine complement the rich berry and mild cheese flavour.

Ingredients:

  • 1/2 pint (or more depending on the size of your brie) strawberries, sliced
  • salt to taste
  • 2 Tbsp olive oil
  • 1 wheel brie cheese
  • 1/4 cup chopped dark chocolate (optional)

Instructions:

Preheat oven to 375 degrees. Toss strawberries with oil and salt, then spread on a baking sheet and roast for 20 minutes. At the same time, heat the brie in a brie baker until the inside of the cheese is melted (about 20 min). Cut a thin layer of the rind off the top of the brie, exposing the soft cheese. Top with roasted strawberries. Serve with your choice of cracker or crostini. Pair with Decadence (Strawberry Chocolate) wine from Rush Creek Wines.

If you are feeling extra indulgent, try adding dark chocolate chunks to the strawberry topped brie. Pop back in the oven for a couple more minutes until the chocolate has melted. Devine!
