Ingredients:
4 sweet potatoes (about 2 lbs.
1/4 cup extra virgin olive oil
1 Tbsp chopped fresh rosemary
1 tsp coarse salt
1/4 tsp red pepper flakes
Method:
- Heat oven to 500 degrees F.
- Cut potatoes into wedges
- Place potato wedges into bowl with remaining
ingredients, toss potatoes until evenly coated.
Season with salt and pepper if desired.
- Place on baking sheet. Arrange seasoned potato wedges in a single layer on a greased baking sheet for quicker baking. For crisper fries, place potatoes at least 1” apart.
Note: I recently, made these fries, and baked them on barbeque on high with lid down. Delicious, everyone enjoyed.
