Ingredients
- 2 1/2 cups apples, thinly sliced (leave peel on)
- 1/4 cup red onion, thinly sliced
- 5 oz. baby spinach or mesclun mix
- Kernal Peanuts candied peanuts.
Methods/Steps
Mix salad ingredients into large bowl.
In a small bowl, mix all ingredients for dressing.
Add dressing to salad mixture when ready to serve and toss gently.
Sprinkle with candied peanuts.

Dressing
- 1 tbsp maple syrup
- 1 tsp red wine vinegar
- 1/2 tsp Dijon mustard
- 1 tbsp Pristine Gourmet olive oil
- 1 tbsp chopped chives
- Salt & pepper to taste
- 2 slices VG Meats bacon – cooked, drained and crumbled
