Ingredients:
2 tbsp olive oil
1 onion, diced
3 cloves garlic minced
1/2 tbsp yellow curry
2 tbsp soy sauce
1 tsp salt
1 tsp pepper
2 tsp raw sugar
1 sweet potato, shredded
1 tbsp shredded coconut
½ cup green onions, minced
½ cup cilantro or Thai basil
1tbsp flour
1 tbsp water
1 cup oil
Method:
In a medium size sauce pan over medium-high heat add the olive oil and sauté the onion and garlic until soften. Add the curry and cook for 1 minute. In a small bowl mix the soy, salt, pepper, and sugar-then add to sauce pan and stir-add sweet potato and cook until soft, approximately 5 minutes-add the remaining ingredients and remove from heat.
Use the flour and water to make a paste to close the wontons. On a clean work surface, lay out the wonton wraps and place 1 tbsp of filling in the center. Brush the wonton with the paste and seal like a triangle.
Heat 1 cup of oil in a pan and when the oil has reached the temperature of 350, drop the dumplings in and cook until they are golden brown. Drain on a rack or paper towels and serve with Hot Garlic Dipping Sauce.
Hot Honey-Garlic Dipping Sauce
1 cup honey
¾ cup water
½ cup Soy Sauce
½ cup white vinegar
2 tbsp minced garlic
1 tsp salt
1 tbsp hot sauce
Combine all the ingredients in a saucepan and place on medium heat. Bring to a boil and simmer for 20 minutes, stirring until sauce has thickened to a syrup consistency.
