Caramel Popcorn

Serves 6-8
Recipe by: Ontario Popping Corn, Walsingham

 

1/2 cup Uncle Bob’s yellow popping corn from Norfolk County

1-1/2 cups brown sugar

3/4 cup butter

1/3 cup corn syrup

1/4 tsp sea salt

3/4 tsp baking soda

1 – 1/2 tsp vanilla

Methods/Steps

With the use of a micro-popper pop 1/2 cup of Uncle Bob’s popping corn in bowl and set aside. Combine brown sugar, butter, corn syrup and salt and microwave on high for 1-2 minutes in the micro-popper until the mixture is bubbly. Stir well. Boil hard for another 3 minutes stirring (stir mixture after one minute). Add and mix in the baking soda and vanilla. This mixture will foam up. Pour this mixture over the popcorn and stir or shake well until all of the popping corn is well coated. Pour the caramel pop corn on waxed paper to cool. Once cooled store in an air tight container and enjoy.
