- 1/2 cup butter, softened
- 1 cup sugar
- 1 egg
- 3/4 cup Kernal Peanuts smooth peanut butter
- 1/2 tsp vanilla
- 2 cups of all-purpose flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 4 ounces semi sweet chocolate, melted
- 1/4 cup chopped roasted Kernal’s redskin peanuts
Method:
Cream butter and sugar until light and fluffy. Beat in egg, peanut butter and vanilla. Thoroughly blend flour, baking soda and salt together.
Gradually add to creamed mixture. Beat until well mixed. Form into 1″ balls. Place on a greased baking sheet. Flatten each ball with the bottom of a glass.
Bake at 375 degrees F for 15 minutes. Remove from baking sheet and cool. Spread about 1/2 tsp of the melted chocolate onto the top of each cookie.
Top with the chopped peanuts.
Yields about 4 dozen cookies.
