Norfolk Crisp

Ingredients:

  • 1 Cup peeled & medium sliced Norfolk Apples
  • 1 Cup peeled & sliced Norfolk peaches
  • 1 Cup frozen Norfolk Saskatoon berries (can substitute blueberries)
  • 1 tsp. Ground cinnamon
  • ¼ tsp. Ground nutmeg
  • 2 tsp. Vanilla
  • 1 tbsp dark rum
  • ¼ cup flour
  • ½ cup packed brown sugar

Topping:

  • 1 cup all purpose flour
  • 1 cup brown sugar
  • 1 cup rolled oats
  • 2/3 cup melted butter
  • ¼ tsp. Ground nutmeg
  • ½ tsp. Ground cinnamon
  • ½ tsp. salt

Method:

Preheat oven to 375°F.  Mix together the sliced apples and peaches.  Add the dry ingredients and mix well.  Add the Vanilla and dark rum.  Grease a (7 ½” x 11”) baking dish with butter and add the fruit mixture.  Sprinkle the Saskatoon berries on top of the fruit mixture.

To make the topping mix the flour, oats, brown sugar, cinnamon, nutmeg, and salt until there are no lumps.  Gradually add the melted butter until the mixture will stick together but is still dry looking.  Place the topping on the fruit, do not pack it down, and place in the oven for 30 minutes or until the apples are just cooked and top is golden brown.

Serve with your favourite vanilla ice cream and caramel sauce and you are in for a treat.
