Ingredients:

 

8 gallons water

1 gallon molasses

1 gill of spruce*

3 pints good yeast

A small quantity of potash when bottled

*gill=quarter of a pint or a half cup

Spruce=spruce boughs boiled in water until it tastes of spruce

 

Method:

 

Put in a clean crock.  Shake well together.  Let it stand a week to work.  If the weather is warm it will take less time.  When drawn off to bottle, add spoonful of molasses to a bottle.

Nice Cookies That Will Keep Good Three Months

 

Nine cups flour, three and a half of butter, five of sugar, large coffee cup of water, with a heaping teaspoonful of pearl ash dissolved, in it; rub your butter and sugar into the flour, great spoonful of caraway.
