Also known as “No Vampires Allowed Chicken”

Preheat oven to 400°F. Break up garlic into cloves, without peeling, and scatter them over the bottom of a roasting pan. Rub chicken with a little salt, pepper and olive oil. Poke holes into skin of lemon with a skewer and place in chicken. Place chicken on top of garlic and put in oven. Roast for about an hour. Remove chicken and place on one side to set.
Pour pan juices into a cup, allow fat to rise (about 5 minutes), spoon off and serve the sauce with chicken. Or return juices to the pan, bring to boil, add a cup of red wine or beer and boil down to half. Serve with chicken.
