Ingredients:
3 ½ lbs. Pork Tenderloin
12 strips of Bacon
2oz Brandy
4 tbsp olive oil
¼ cup maple syrup
½ cup brown sugar
6 shots of espresso or 1 pot of coffee reduced by a third
2 tbsp cornstarch
4 tbsp water
1 red onion finely diced
1 red and green pepper finely diced
Salt
Pepper
Thyme
Method:
Pre-heat oven to 350F. Take tenderloin and clean off any silver skin and fatty pieces. Wrap pork with strips of bacon.
Using a large sauté pan on med-high heat add 2 tbsp oil and pan fry the tenderloin till light golden brown then put in the oven either in the pan or transfer to a baking sheet. Bake for 30 min.
For the Sauce in a med size sauce pan on med-high heat add 2 tbsp of oil and sauté onions add the brandy and Flambé. The add the espresso or reduced coffee, maple syrup, and brown sugar simmer for 15min. In a separate bowl mix together the cornstarch and water . While the sauce is still simmering add the diced peppers and then thicken with the cornstarch whisking continually until you have reached the point it will coat a spoon.
To serve this dish the tenderloin can be sliced or left whole with the sauce drizzled over the top.
