4 lb boneless sirloin steak (from Norfolk beef suppliers)
2 ½ tbsp freshly cracked black pepper
3 tbsp butter
1 ½ tbsp salad oil
2/3 cup dry white or red wine (Villa Nova Red)
2 ½ tbsp brandy
1 tsp salt
Wipe steak with damp paper towels. Rub 1 ¼ tbsp pepper into each side
Slowly heat large, heavy skillet until very hot. Add 1 tbsp butter and oil, stirring until butter is melted.
Add steak. Over high heat, brown well on each side—about 2 minutes per side. Reduce heat to medium, and cook an additional 8-10 minutes per side for medium –rare. Remove steak to platter and keep warm.
Add remaining butter, wine, brandy and salt to skillet. Simmer, stirring 3 minutes. Pour over steak
