“This recipe is so easy and delicious! It is an absolute favourite in our house and we have ‘breakfast for dinner’ regularly! For my hungry family of four, I always double the recipe.”
1 cup all-purpose flour
1 tablespoon sugar
2 teaspoons baking powder
1/4 teaspoon salt
1 beaten egg
1 cup milk
2 tablespoons cooking oil
1/2 teaspoon vanilla
1/4 cup sliced Wholesome Pickins Strawberries
1. Combine the flour, sugar, baking powder, and salt. Make a well in center of flour mixture; set aside. Combine the egg, milk, oil and vanilla. Add egg mixture all at once to flour mixture. Stir just until moistened (batter should be lumpy). Pour in strawberries and gently mix into batter. Add additional milk to thin batter, if necessary.
2. For standard size pancakes, pour 1/4 cup batter into a 3 inch circle onto a hot, lightly greased griddle. (I set mine at 375) Cook over medium heat about 2 minutes each side or until pancakes are golden brown. Turn pancakes to second side when pancakes have bubbly surfaces and edges are slightly dry.
3. Garnish with fresh Wholesome Pickins strawberries and Ontario Maple Syrup!
Makes 8 Standard Size Pancakes
