- 2 unpeeled Sweet Potatoes cut lengthwise in wedges
- ¼ cup olive oil
- 1 sprig fresh rosemary, coarsely chopped
- 3 sprigs fresh thyme, coarsely chopped
- 4 cloves garlic, chopped
- Fresh ground pepper
- ¼ tsp paprika
- 1/3 bottle Ramblin’ Road Dakota Pearl Ale
Combine all ingredients in a freezer bag and let marinade for 2 hours. Grill at 350˚F (indirect heat) until cooked through, approx. 60 minutes. Baste with remaining marinade while grilling.
