Ingredients
- 1/2 5oz. pkg. baby arugula
- 1 lb Norfolk County heirloom tomatoes, thinly sliced
- 1/2 lb feta cheese, sliced thinly
- 30 leaves fresh Country Herbs basil
- 2 tbsp balsamic vinegar
- 4 tsp anchovy paste
- 2 tsp Dijon mustard
- 1 clove Norfolk County garlic, minced
- Pinch salt & pepper
- 1/3 cup extra virgin olive oil
Methods/ Steps
- Arrange arugula on large platter.
- Top with overlapping rows of alternating tomato, cheese and basil.
- In bowl, whisk together vinegar, anchovy paste, mustard, garlic, salt and pepper. Whisking constantly, add oil in slow steady stream until thickened and emulsified.
- Drizzle the salad with dressing.
