Recipe by: Norfolk County’s Two Fairly Fat Guys

Ingredients

        1/2 5oz. pkg. baby arugula

 

        1 lb Norfolk County heirloom tomatoes, thinly sliced

 

        1/2 lb feta cheese, sliced thinly

 

        30 leaves fresh Country Herbs basil

 

        2 tbsp balsamic vinegar

 

        4 tsp anchovy paste

 

        2 tsp Dijon mustard

 

        1 clove Norfolk County garlic, minced

 

        Pinch salt & pepper

 

      1/3 cup extra virgin olive oil

Methods/ Steps

        Arrange arugula on large platter.

 

        Top with overlapping rows of alternating tomato, cheese and basil.

 

        In bowl, whisk together vinegar, anchovy paste, mustard, garlic, salt and pepper. Whisking constantly, add oil in slow steady stream until thickened and emulsified.

 

      Drizzle the salad with dressing.
