2 cups chopped yellow onions
1/4 cup Pristine Gourmet oil
Cook these for 5 minutes.
2 tsp balsamic vinegar
2 garlic cloves -sliced
2 tsp maple syrup
Add these to onions and cook 2 minutes more.
4 cups chopped tomatoes in their juice
Add to pan and cook 10 minutes more.
Add 2 cups vegetable stock, salt and pepper to taste.
Options: Add 2 cups of fresh basil leaves for a different taste or top with toasted bread.
